Potato Soup.
A great go to meal that hits the spot on a cold day.

                                                       This is what I started with:

5 lbs of potatoes.
1 small turkey ham
1 onion
1 cup carrots
2 teaspoons butter
1 cup milk
1 teaspoon garlic salt
salt & pepper to taste
Slice the carrots and start boiling them in the water.
They take the longest to cook.
I try to sneak other veggies in when I can.


Enlist husband to peel potatoes.
 Cut into 1 inch cubes and add to the carrots in the pot.
While they are boiling dice onion and saute with butter.
Then dice the ham and throw them in. Leave on very low heat.



When the potatoes are soft enough to easily cut with a fork drain 1/2 of the water --not all potato water since it is a great thickener.

Mash the heck out of them. I leave some big chunks but you prefer a smoother texture mash it all.

Add to the onions and ham mixture.
stir in the milk, garlic salt and a pinch of salt and pepper then simmer for 1/2 an hour.

Garnish with cheese.
Eat!
