Potato Soup.
A great go to meal that hits the spot on a cold day.

                                                       This is what I started with:

5 lbs of potatoes.
1 small turkey ham
1 onion
1 cup carrots
2 teaspoons butter
1 cup milk
1 teaspoon garlic salt
salt & pepper to taste
Slice the carrots and start boiling them in the water.
They take the longest to cook.
I try to sneak other veggies in when I can.


Enlist husband to peel potatoes.
 Cut into 1 inch cubes and add to the carrots in the pot.
While they are boiling dice onion and saute with butter.
Then dice the ham and throw them in. Leave on very low heat.



When the potatoes are soft enough to easily cut with a fork drain 1/2 of the water --not all potato water since it is a great thickener.

Mash the heck out of them. I leave some big chunks but you prefer a smoother texture mash it all.

Add to the onions and ham mixture.
stir in the milk, garlic salt and a pinch of salt and pepper then simmer for 1/2 an hour.

Garnish with cheese.
Eat!

Pina colada cake balls!

I made these for my mother-in-law today her birthday.
Here is how I did it.
This is what I started with:

Then I baked the cake according the instructions on the box.
After the cake has cooled off, crumble up real fine in a large bowl.

Add 1/2 of the can of sweetened condensed milk and stir together. When the mixture is about the same consistancy of play dough you have got it right.
Roll into balls about the size of a ping pong ball.
Place in freezer for about 1/2 hour. While they are setting get started melting your almond bark.
Dip each ball into the almond bark tapping on the side of the bowl before placing on your wax paper.
After I finished each row I sprinkled with shredded, sweetened coconut so it would stick before it cooled off to much.
Place back in freezer for another 1/2 hour then enjoy!

I got up early on a Sat morning to drop my oldest daughter off to take her ACT test. It's amazing how fast time has gone by. Seems like yesterday I was dropping her off for kindergarten. This is her senior year and it's getting closer and closer to the end. It's bittersweet but I am also excited for her too.
