Red lights
One day last week I hit a red light at every single intersection I stopped at on my way to work. The next day I thought I am going to blog about this. I was going to write something very insightful and moving. Something about us being in an instant gratification society and that we need to stop and smell the roses. Yada Yada Yada.


 I tried to take a picture of a red light the next day on my way to work. For the life of me I COULD NOT get a picture of a red light! They would be green already or when I finally stopped and got out my camera they would change!


I finally got the shot the following day but I had to laugh. Life is full of surprises. You just have to be grateful for the hand you are dealt and roll with it!

Mexican Dip

My friend Pat -aka goddess- of the kitchen shared this recipe with me and now I'm sharing with you. This stuff is so good you'll need to twelve step program to stop eating it.

Here is what you need:
1lb of hamburger or ground chuck
2 cups of cooked rice
1 can black beans
1 can tomato and chilies
1 diced onion
1/2 tbs of chili powder
1/2 tbs garlic salt
1 tsp paprika
1 tsp oregano (not pictured forgot)


Brown your meat and onion together then drain the grease.


 At the same time cook your rice. I use brown in an attempt to be healthier and you won't notice the difference in this dish.


Drain and rinse your black beans


Add all the spices and stir in.


 Add in can of tomatoes.


Add in your beans.


Stir then let simmer on low heat for 15 minutes. All those flavors will hold hand and start singing Kum ba ya together. And believe me your tongue will thank you!

 Now you must take a chip and taste test. And another and another --it's all about quality control. If you are satisfied you then call to your family to come and get it before you eat it all.


 You can serve this on tortillas, on chips, or melt with Velveeta and it makes a delicious dip. You make it hotter by added in jalapenos. I had weenies for dinner so I couldn't but it pretty darn good that way too.

Softball


This is what I spent my weekend doing. We had a softball tournament Sat and Sun. We lost our first two games on Sat which placed us in the bottom bracket. This meant we had a chance to work our way back up to the top from the bottom. We started out great on Sunday winning the first three back to back games we played. It was 90+ outside. Those girls worked their tushes off. That fourth game got us though. We had been out there for about five ours by then. They gave it good try. I am very proud of them. MMMM mushrooms


As a child I used to hate them but now I know better. They have a deliciousness that can't be substituted. I sauteed some with butter and Worcestershire sauce then served them on burgers. Yummy!

Happy Anniversary to my wonderful husband!

It's only been 4 years. It's gone by so fast! Before we know it we will be sitting our rockers at the old folks home. You a spry 90 year old and me a hot young 80 year old.
I am so glad God lead us to each other. You are perfect for me.
Who else would save me from earth worms, laugh at my stupid jokes or eat the onions off my salads? I'm so glad to be able to share my life with you!

I love Oklahoma sunsets.

This past week there were two huge storms, one headed north, the other headed south, that collided in the middle. I got some video of it. The clouds were swirling around. It was breath taking. My footage doesn't really do it justice.
